After pounding the chicken breasts, place them in a large zip-top bag and pour the marinade over the chicken. Seal the bag, then gently massage the outside of the bag to coat every piece evenly.

How Long Should You Marinate Chicken?

For the best results, marinate the chicken for 1½ to 3 hours.

Many people assume longer is always better, but that’s not true when using citrus. The acid in lime juice continues breaking down the proteins in the meat. After several hours, the texture can become overly soft or even mushy.

The sweet spot is between 90 minutes and 3 hours for perfectly tender, flavorful chicken.

Best Lime-Marinated Chicken

Lime-marinated chicken is a easy dinner or meal-prepping recipe that makes hitting your protein goals a snap.

Equipment

  • 1 gallon size freezer bag
  • 1 zester

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 Lime, zest and juice Zest the lime and then juice it.
  • 4 chicken breasts
  • salt and peper to taste

Instructions
 

  • In a small bowl, whisk together the EVOO, lime zest, lime juice, salt and pepper.
  • Pound the chicken to consistent thickness and add to a gallon freezer bag.
  • Pour the lime marinade over the chicken and seal the bag.
  • Massage the chicken in the bag to make sure that the chicken is coated with marinade.
  • Place in the refrigerator for at least an hour and up to 3 hours.
  • Remove from the refrigerator and let come to room temperature before grilling or baking the chicken to your preferred degree of doneness.
