Lime-marinated chicken is a easy dinner or meal-prepping recipe that makes hitting your protein goals a snap.

Equipment

  • 1 gallon size freezer bag
  • 1 zester

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 Lime, zest and juice Zest the lime and then juice it.
  • 4 chicken breasts
  • salt and peper to taste

Instructions
 

  • In a small bowl, whisk together the EVOO, lime zest, lime juice, salt and pepper.
  • Pound the chicken to consistent thickness and add to a gallon freezer bag.
  • Pour the lime marinade over the chicken and seal the bag.
  • Massage the chicken in the bag to make sure that the chicken is coated with marinade.
  • Place in the refrigerator for at least an hour and up to 3 hours.
  • Remove from the refrigerator and let come to room temperature before grilling or baking the chicken to your preferred degree of doneness.
