I know, I know…the book plans for 8 days at a time for the rest of the month but I just don’t roll that way! Plus you will notice that I have changed up the book menus quite a bit. Feel free to follow along with me or stick with the week’s menu outlined in the book

Sunday prep

  • Spring Roll Chicken Salad with Asian Dressing – pack separately for lunch tomorrow
  • Wash, dry and store romaine lettuce
  • Rice fresh cauliflower
  • Make 1/2 Chimichurri recipe

Monday

B – Crustless Ham and Cheese Quiche p. 136

L – Spring Roll Chicken Salad with Asian Dressing p. 226* – web recipe is close but not exact

Double the dressing. Poach chicken in Instant Pot for 10 minutes then shred with mixer.

D – Taco Soup p. 236 with Grilled Romaine Salad p. 166
